Learn the fine art of cooking tender bites of beef kebab, as Executive Chef Kadrianta Sinulingga takes a pause from his busy schedule at Akdeniz Restaurant, Centara Hotel Muscat, to present this tried and tested recipe


Beef Kabab Recipe


  • 300gms beef sirloin without fat or striploin if preferred with little fat
  • 50 ml olive oil
  • 40 ml white vinegar
  • 10gms cumin powder
  • 5gms coriander powder
  • 10gms paprika powder
  • 5gms chili powder (can be adjusted if you prefer it spicy)
  • 5gms garlic, minced
  • 20gms yoghurt, plain
  • Fresh coriander leaves for garnish
  • Salt and pepper to taste
  • 3pcs bamboo skewer


  • 1medium sized tomato
  • 1 large onion
  • 1 red capsicum
  • 1 medium eggplant

Dipping sauce

  • 50gms mayonnaise
  • 5gms garlic, roasted till brown and minced
  • 5 ml olive oil
  • Lemon juice, to taste
  • 5gms tahini sauce
  • Salt and pepper to taste


  1. In a mixing bowl, add olive oil, white vinegar, cumin powder, coriander powder, paprika powder, chili powder, minced garlic and yoghurt and mix well.
  2. Cut the beef into cubes about 1cm x 1cm, or bigger if preferred.
  3. Add the beef into the marination and let it sit in the marination for minimum of two hours (overnight is better).
  4. Cut all the vegetables in half. Cut half of them into cube size (same size as the beef) and leave the other half keep as it is.
  5. Marinate the vegetables with salt, pepper, olive oil and chili powder.
  6. Prepare the bamboo skewer and arrange the beef and the vegetables cube as per the picture.
  7. Grill them in charcoal fire or any gas stove, along with the halved vegetables.
  8. You could also cook it in a big flat surface pan, if you do not have a griller.
  9. For dipping sauce, just mix all ingredients and set aside.
  10. Serve as per the picture with fresh coriander leave or any style you preferr.
  11. Enjoy delicious homemade beef kabab.
