Baba Ghanoush & Other Ramadan Recipes

Baba Ghanoush

Ingredients (serves 4):

  • 500gms grilled eggplant           
  • 40gms tomato
  • 40gms red onion
  • 40gms bell pepper
  • 2tsp garlic minced
  • 2tbsp parsley & mint
  • 20 ml lemon juice
  • 10gms pomegranate seeds
  • 20ml pomegranate molasses
  • olive oil
  • Salt

Method:

  1. Roast the eggplant in a pan until it is soft.
  2. Remove the skin from the eggplant and chop it finely.
  3. Chop tomato, red onion, bell pepper, garlic, mint and parsley.
  4. Mix it with the eggplant.
  5. Season with lemon juice and salt.
  6. Garnish with pomegranate seeds, mint leaf and pomegranate molasses. Top it with olive oil (optional).
  7. Serve cold as shown in the picture.

Muhammara

Ingredients (serves 4):

  • 100gms tomato
  • 100gms onion
  • 25gms garlic
  • 10gms cumin powder
  • 100gms red bell pepper
  • 2tsp chili paste
  • 100gms bread crumbs
  • 100gms crushed nuts
  • 2tbsp tomato paste
  • 200ml olive oil
  • 40ml pomegranate molasses
  • Berries (for garnish)
  • Lavash bread (for garnish)

Method:

  1. Roast bell peppers, onion, garlic, fresh tomato.
  2. Add tomato paste, cumin powder and chili paste.
  3. Mix the rest of the ingredients in a blender.
  4. Once the mixture is ready add breadcrumbs, pomegranate molasses & olive oil.
  5. At the end, add berries and lavash bread as decoration

Lahem Bil Ajeen (Pide)

Ingredients (serves 4):

  • 400gms minced lamb
  • 100gms onion
  • 40gms parsley
  • 10gms pine nuts
  • 4 cherry tomatoes
  • 20ml pomegranate molasses
  • 600gms flour
  • 10gms yeast
  • 100ml milk
  • 100ml water
  • Salt (to taste)
  • 10gms sugar

Method:

  1. For the dough, mix flour, yeast, water, milk, salt and sugar together and knead it, until it is combined.
  2. Leave the dough to rest for 1 hour.
  3. Shape the dough as in the picture.
  4. Roast the minced lamb meat with onion, cherry tomatoes, pine nuts and parsley until it is cooked.
  5. Stuff the dough with the lamb mix.
  6. Bake the Lahem Bil Ajeen at 180 degrees for around 20 minutes in the oven.
  7. Garnish with cherry tomatoes
