Sometimes pampering yourself means retail therapy. Sometimes it means getting your nails done, or a massage. And sometimes it means cooking for yourself – a meal you love that makes you feel good. While many hesitate to cook for one in the fear of ending up with too many leftovers, we’ve got these wonderful recipes for one, that are just what you need to pamper yourself!

Baked Chicken & Avocado Toast

Ingredients

  • 1 chicken breast
  • 2 tsp honey
  • ½ tsp garlic paste
  • ½ tsp paprika
  • A pinch of chilli flakes
  • Salt, to taste
  • 3 tsp lemon juice
  • 2 slices of your choice of bread
  • ½ avocado, mashed
  • 3 sprigs of coriander, finely chopped
  • Fresh arugula

Preheat the oven to 200 °C. Marinate the chicken breast with honey, garlic paste, paprika, chilli flakes, salt and 2 teaspoons of lemon juice. On a hot pan, drizzle some olive oil and sear the chicken on both side for a minute each, until golden. Then pop the chicken breast into an oven proof dish and bake for 20 minutes or until cooked through. While the chicken cooks, mix mashed avocado, coriander, and the remaining teaspoon of lemon juice; add a bit of salt and pepper if desired. Take the chicken out of the oven and let it rest for 2 minutes, then slice carefully and set on a plate. Toast the bread slices, then spread the mashed avocado onto them and serve with fresh arugula. This is a perfect recipe for one!

Chocolate Mug Cake

Ingredients

  • 3 tbsp all purpose flour
  • 3 tbsp sugar
  • 2 tbsp cocoa powder
  • ¼ tsp baking powder
  • 3 tbsp milk
  • 3 tbsp vegetable oil
  • ¼ tsp vanilla extract

In a microwave proof ceramic mug, mix flour, sugar, cocoa powder, baking powder, milk, vegetable oil and vanilla extract. Using a fork, blend the ingredients until smooth and well incorporated. Place the mug in the microwave and heat it on the high setting for 90 seconds. Take it out, let it cool for a minute or two and then dig in. You can also pop a dollop of vanilla ice cream on to the cake before eating it. There you are, go ahead and enjoy the meal made from this recipe for one
