Nothing beats a bowl of homemade fresh pasta accompanied with a delicious sauce. While there is no declared war between dried pasta and fresh pasta, homemade pasta is always the answer to those who love the tastier, springy, and delicate version.
The fresh pasta differs from the dried ones in the ingredients. Fresh pasta is made with flour and egg, whereas dried pasta is made with durum wheat and water. Dried pasta is widely used as it is convenient to transport and store. Fresh homemade pasta is better with butter-based sauces and dried pasta goes well with heavier meat sauces.
It’s super fun to roll out fresh pasta at home since it requires only a handful of basic ingredients and besides it’s super delicious. If you have an hour to spend in the kitchen with someone you love, you will get to eat a big plate of homemade pasta of chewy noodles with a perfect al dente bite.
Try out this four-ingredient fresh pasta at home, and sit down to relish fresh ravioli, tagliatelle, tortellini, fettuccine or a hearty lasagna in under two hours.
Ingredients
- 2 cups all-purpose flour
- 3 large eggs
- ½ teaspoon sea salt
- ½ tablespoon extra-virgin olive oil
Step 1: Place the flour on a clean work surface. Add the eggs, olive oil, and salt to the centre and use a fork to gently break up the eggs. Slowly, incorporate the flour with your hands and bring it together into a ball.
Step 2: Knead the dough for 8 to 10 minutes. After 8-10 minutes of kneading, the dough will be cohesive and smooth. If the dough is too sticky, dust in more flour. Wrap the dough in plastic wrap, and let it rest for half an hour.
Step 3: Dust 2 large baking sheets with flour and set aside.
Step 4: Slice the dough into four pieces. Gently flatten one into an oval disk. Run the dough through the Pasta Roller Attachment three times on level 1. Don’t worry if you don’t have a pasta machine, you can do it by hand as Italian home chefs do with a long rolling pin and roll them into small pieces rather than big ones.
Step 5: Set the dough piece onto a countertop or work surface. Fold both short ends in to meet in the centre, then fold the dough in half to form a rectangle.
Step 6: Run the dough through the pasta roller three times on level 2, three times on level 3, and one time each on levels 4, 5, and 6.
Step 7: Lay half of the pasta sheet onto the floured baking sheet and sprinkle with flour before folding the other half on top. Sprinkle more flour on top of the second half. Every side should be floured so that your final pasta noodles won’t stick together.
Step 8: Repeat with remaining dough.
Step 9: Run the pasta sheets through the Pasta Cutter Attachment. Repeat with remaining dough. Cook the pasta in a pot of salted boiling water for 1 to 2 minutes.
