Cheese And Pepper Pasta

Ingredients

  • 15 oz spaghetti
  • 4tbsp butter
  • 3 garlic cloves crushed
  • 1 tbsp coarsely ground black pepper
  • 1 cup freshly grated parmesan
  • 1/2 cup finely grated pecorino
  • 1/4 cup finely chopped fresh chives

Method

  1. Cook pasta until al dente in a large saucepan of boiling, salted water and a dash of oil. Drain 2and reserve 1 cup cooking liquid.
  2. Melt butter in a large skillet over medium-high heat. Add butter, garlic and pepper. Stir until fragrant.
  3. Add pasta and reserved pasta water. Stir to form a thin sauce. Toss to coat the pasta and add salt.
  4. Garnish with parmesan, pecorino and chives.

Tuna Omelette

Ingredients

  • 1 medium onion chopped
  • 66.5 oz Can tuna in spring water, drained
  • 1½ cup mayonnaise
  • ½ cup sharp cheddar cheese
  • 6 large eggs
  • A pinch of coarse ground black pepper
  • 1 tsp parsley
  • 1tbsp butter

Method

  1. To make the filling, mix chopped onion, mayonnaise, and tuna.
  2. Swirl the pan with butter. Beat eggs in a bowl with salt and pepper. Pour the egg mixture into the pan. Once the eggs start to set, add in cheese and slide into a plate.
  3. Add the filling and sprinkle parsley. Enjoy.

Beef Burrito

Ingredients

  • 1 28 oz Can ground beef
  • 1 envelope taco seasoning
  • 1 28 oz Can beans
  • 6 flour tortillas
  • 1 cup shredded Cheddar cheese

Method

  1. In a large cast-iron, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning; remove from skillet and set aside.
  2. In a small saucepan, cook canned beans over medium-low heat until heated through.
  3. Spoon about 1/3 cup of beans on each tortilla; top with 1/4 cup beef mixture. Sprinkle with cheese. Fold sides and ends of tortillas over filling and roll up.
