Work up a sweat; the humble jalapeno is here to add a touch of heat to your winter evenings.
Jalapeno Poppers
Ingredients:
- 10 jalapeno chillies
- 125gms cream cheese, full-fat
- 50gms mozzarella, grated
- 25gms (2 & ½tbsp) plain flour
- 2 eggs, lightly beaten
- 100gms breadcrumbs, fresh
- Salt & pepper, to taste
- oil for deep frying
- Lime wedges (optional)
Method:
- Take the chillies, one at a time, and using a sharp knife make an incision along the length, without cutting all the way through.
- Make an opening and scrape out the seeds and membrane using the end of a teaspoon. Do the same with all the chillies (use gloves to avoid heat from the chillies).
- In a bowl, mix the cream cheese and mozzarella with salt and pepper. Use a spoon fill the chillies with the mixture and gently push the ends together to close them up and wipe off any excess.
- Use separate plates or bowls to place the flour, eggs and breadcrumbs. Now roll the stuffed chillies first in the flour, followed by eggs and last with breadcrumbs. Repeat the steps to give the chillies a strong second coating.
- Place a large saucepan on heat and add oil for deep frying. When the oil turns hot, slowly lower the chillies into it with a slotted spoon. Deep fry the chillies until they turn deep golden brown.
- Remove from oil and arrange on a plate lined with kitchen paper to soak up the excess oil.
- Serve it with lime wedges and your choice of sauce.
Stuffed Jalapenos
Ingredients:
- 10 jalapeno peppers
- 4 ounces cream cheese, softened
- ¾ cups mozzarella cheese, shredded
- ½ cup cooked chicken, diced
- ¼ cup blue cheese salad dressing
- ¼ cup buffalo wing sauce*
Method:
- Cut all the peppers half lengthwise, leaving stems intact. Using a spoon, scrape off the seeds and the membrane.
- Place all other ingredients in a small bowl; mix it to combine together.
- With the help of a spoon or a piping bag, fill the pepper halves with the prepared mixture.
- Grease a baking pan and place them, stuffed side up, in a line.
- Bake it at 325° for about half an hour.

(* You could make your own buffalo wing sauce with melted butter (½ cup), hot sauce (½ cup), white vinegar (2tbsp), Worcestershire sauce (2tsp) and a pinch of minced garlic. Whisk together all the ingredients until well combined and store in the refrigerator for up to one month).
