Learn the fine art of cooking tender bites of beef kebabs, as Executive Chef Kadrianta Sinulingga takes a pause from his busy schedule at Akdeniz Restaurant, Centara Hotel Muscat, to present this tried and tested recipe
Beef Kebabs Recipe
Ingredients
- 300gms beef sirloin without fat or striploin if preferred with little fat
- 50 ml olive oil
- 40 ml white vinegar
- 10gms cumin powder
- 5gms coriander powder
- 10gms paprika powder
- 5gms chili powder (can be adjusted if you prefer it spicy)
- 5gms garlic, minced
- 20gms yoghurt, plain
- Fresh coriander leaves for garnish
- Salt and pepper to taste
- 3pcs bamboo skewer
Vegetables –
- 1medium sized tomato
- 1 large onion
- 1 red capsicum
- 1 medium eggplant
Dipping sauce –
- 50gms mayonnaise
- 5gms garlic, roasted till brown and minced
- 5 ml olive oil
- Lemon juice, to taste
- 5gms tahini sauce
- Salt and pepper to taste
Method
- In a mixing bowl, add olive oil, white vinegar, cumin powder, coriander powder, paprika powder, chilli powder, minced garlic and yoghurt and mix well.
- Cut the beef into cubes about 1cm x 1cm, or bigger if preferred.
- Add the beef into the marination and let it sit in the marination for a minimum of two hours (overnight is better).
- Cut all the vegetables in half. Cut half of them into cube size (same size as the beef) and leave the other half to keep as it is.
- Marinate the vegetables with salt, pepper, olive oil and chilli powder.
- Prepare the bamboo skewer and arrange the beef and the vegetable cube as per the picture.
- Grill them in charcoal fire or any gas stove, along with the halved vegetables.
- You could also cook it in a big flat surface pan if you do not have a griller.
- For the dipping sauce, just mix all ingredients and set aside.
- Serve as per the picture with fresh coriander leave or any style you prefer.
- Enjoy delicious homemade beef kabab.
