It’s the season of love, and what better way to a loved one’s heart than through their stomach? Homemade desserts have an appeal of their own – bake or no bake – every bite speaks volumes about the love with which they’ve been put together.
But if you’re daunted by the long baking durations or churning out multiple elements that go into making most desserts, we’ve got just what you need – easy no bake desserts. Put on your apron, grab a whisk and let’s go!
Watermelon Granita
Ingredients:
- 4 cups watermelon, deseeded and cubed
- ½ cup sugar
- Juice of ½ lime
Using a blender, puree the watermelon, sugar and freshly squeezed lime juice. Pour the mixture into a loaf baking tin and place in the freezer for 1 hour. At this point, take it out and using a fork, stir it and break up any large clumps. Pop it back into the freezer for 2 hours, then using a fork, scrape the granita to form flakes. Garnish with fresh mint leaves and serve.
Chocolate Hazelnut Salami
Ingredients:
- 180 g digestive biscuits, broken into chunks
- 200 g dark chocolate
- 90 g unsalted butter
- 6 tbsp milk
- 1 tsp vanilla extract
Place the dark chocolate and butter in a bowl over a pot of simmering water, making sure that the bottom of the pot doesn’t touch the water; melt until smooth. Take it off the heat, and stir in milk and vanilla extract. Pour the melted chocolate mixture over the crushed biscuits and mix until combined. Once cooled completely, transfer the mixture onto a square of cling wrap and roll to shape it into a log. Tightly wrap the log with cling wrap and refrigerate for 2-3 hours or until firm. Then slice it up and serve chilled.
