 Cabbage Broth

Soup Succour Complete With Cabbage

Ingredients:

  • 500g cabbage, chopped
  • 225g celery, diced
  • 150g onion, diced
  • 150g carrots, diced
  • 1 green bell pepper, diced
  • 2-3 cloves garlic, minced
  • 4 cups chicken broth
  • 250g diced tomatoes
  • 1tsp oregano
  • 1tsp basil
  • ½tsp red chilli flakes
  • 2tbsp olive oil
  • Salt & pepper (to taste)

Method:

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat and add celery, onions, bell peppers, and carrots. Sauté until slightly tender.
  2. Add in garlic and pour in the chicken broth.
  3. Now, mix in tomatoes and cabbage, bring it to a boil and then reduce heat.
  4. Cook until cabbage is tender.
  5. Season it with oregano, basil, red chilli flakes, black pepper and salt.
  6. Turn off the heat and serve hot.

(P.N. – This soup can be stored in the fridge for three days.)

Veggistrone Soup

Soup Succour Complete With Cabbage

Ingredients:  

  • 2tbsp extra-virgin olive oil
  • 2 medium onions, chopped
  • 4 medium stalks celery, chopped
  • 1 medium green bell pepper, chopped
  • 4 cloves garlic, minced
  • 300g cabbage, chopped
  • 500g cauliflower, chopped
  • 100gcarrots, chopped
  • 330g green beans, cut into 1-inch pieces
  • 8 cups vegetable broth
  • 2 cups water
  • 1 can tomato sauce
  • 300g tomatoes, diced
  • 1 can kidney beans
  • 1 bay leaf
  • 750g fresh spinach, chopped
  • 12g fresh basil, thinly sliced
  • 10tbsp Parmesan cheese, grated

Method:

  1. Heat olive oil in a large pot over medium heat and add onions, celery, bell pepper and garlic. Cook it all, stirring frequently, for about 15 minutes or until softened.
  2. Add cabbage, cauliflower, carrots and green beans and keep stirring. Cook until slightly softened.
  3. To this, add the broth, water, tomato sauce, tomatoes, canned beans (rinsed) and bay leaf. Cover the pot and bring it to a boil.
  4. Now reduce heat and simmer until the vegetables are tender.
  5. Lastly, stir in spinach and simmer for another 10 minutes.
  6. To serve, stir in basil and top each portion with 1 tablespoon of cheese.
