If weight loss is on your mind, learn the art of cooking up scrumptious soup that has health pegged on to it complete with cabbage.
Cabbage Broth
Ingredients:
- 500g cabbage, chopped
- 225g celery, diced
- 150g onion, diced
- 150g carrots, diced
- 1 green bell pepper, diced
- 2-3 cloves garlic, minced
- 4 cups chicken broth
- 250g diced tomatoes
- 1tsp oregano
- 1tsp basil
- ½tsp red chilli flakes
- 2tbsp olive oil
- Salt & pepper (to taste)
Method:
- Heat 2 tablespoons of olive oil in a large pot over medium heat and add celery, onions, bell peppers, and carrots. Sauté until slightly tender.
- Add in garlic and pour in the chicken broth.
- Now, mix in tomatoes and cabbage, bring it to a boil and then reduce heat.
- Cook until cabbage is tender.
- Season it with oregano, basil, red chilli flakes, black pepper and salt.
- Turn off the heat and serve hot.
(P.N. – This soup can be stored in the fridge for three days.)
Veggistrone Soup
Ingredients:
- 2tbsp extra-virgin olive oil
- 2 medium onions, chopped
- 4 medium stalks celery, chopped
- 1 medium green bell pepper, chopped
- 4 cloves garlic, minced
- 300g cabbage, chopped
- 500g cauliflower, chopped
- 100gcarrots, chopped
- 330g green beans, cut into 1-inch pieces
- 8 cups vegetable broth
- 2 cups water
- 1 can tomato sauce
- 300g tomatoes, diced
- 1 can kidney beans
- 1 bay leaf
- 750g fresh spinach, chopped
- 12g fresh basil, thinly sliced
- 10tbsp Parmesan cheese, grated
Method:
- Heat olive oil in a large pot over medium heat and add onions, celery, bell pepper and garlic. Cook it all, stirring frequently, for about 15 minutes or until softened.
- Add cabbage, cauliflower, carrots and green beans and keep stirring. Cook until slightly softened.
- To this, add the broth, water, tomato sauce, tomatoes, canned beans (rinsed) and bay leaf. Cover the pot and bring it to a boil.
- Now reduce heat and simmer until the vegetables are tender.
- Lastly, stir in spinach and simmer for another 10 minutes.
- To serve, stir in basil and top each portion with 1 tablespoon of cheese.
