Raspberry Mousse Cake
Ingredients
For the graham cracker crust:
- 2 cups graham cracker crumbs
- 1 tbsp sugar
- 1/2 cup melted butter
For the mousse layer:
- 8 oz cream cheese at room temperature
- 12 oz sweetened condensed milk
- 2 cups heavy cream
- 3-4 tbsp sugar
- 1 cup milk
- 1 oz unflavoured gelatin
- 2 cups raspberries
- Raspberries for garnishing
Method
For the crust:
- Prepare a 10-inch springform pan.
- Combine cookie crumbs, sugar and butter and mix well. Press onto the bottom of the prepared pan and pack firmly. Refrigerate until set.
For the mousse layer:
- Heat milk until lukewarm. Sprinkle unflavoured gelatin on top and whisk to dissolve. Let it stand for 20 minutes.
- In the bowl of a stand mixer beat cream cheese and condensed milk, until well combined.
- Beat heavy cream and sugar, until stiff peaks form. Slowly add the cream cheese and condensed milk mixture, beating at low speed.
- Fold in the cooled milk and gelatine mixture.
- Pour mixture over the graham cracker crust and smooth the top.
- Garnish with raspberries. Chill for a few hours until set.
Oreo Cheesecake
Ingredients
Oreo Crust
- 24 Oreo cookies, filling removed and reserved
Cheesecake Filling
- 16 oz cream cheese
- ½ cup granulated sugar
- 1 tsp vanilla
- 2½ cups heavy whipping cream
- 1½ cups confectioners’ sugar
- 15 cookies crushed and divided
Method
Oreo Crust
- Add 24 Oreos (filling removed and set aside) to a food processor and process until the Oreos are finely crushed.
- In a large bowl, add the processed cookies and the melted butter. Stir to combine.
- Pour the cookie mixture into the bottom of a prepared 9-inch springform pan and press into the bottom and up the sides to form a foundation for the cheesecake.
- Place in refrigerator to chill.
Filling
- In a large bowl using a hand mixer, beat the cream cheese until it is light and fluffy. Add in the sugar, vanilla, and reserved cookie filling.
- In a separate bowl, whip the heavy whipping cream with a hand mixer until it begins to thicken. Add in confectioner’s sugar and beat until stiff peaks form.
- Fold 2 cups whipped cream mixture and crushed Oreos (reserve 1/4 cup for garnish) into the cream cheese.
- Pour mixture on top of the Oreo Crust and spread evenly.
- Place in the refrigerator to chill for at least 3-4 hours (preferably overnight).
- Garnish with remaining crushed Oreos.
Strawberry Jell-O Pie
Ingredients
- 1 premade 10-inch graham cracker crust
- Whipped topping and strawberries for garnish
- 1 package (8 oz) whipped topping, thawed
- 2 cups strawberries, diced
- 1 cup ice water
- ⅔ cup boiling water
- 1 package (3 oz) strawberry Jello
Method
- In a large bowl, dissolve Jell-O in boiling water. Add ice water; stirring well until all ice has melted. Allow to sit at room temperature for 10 minutes to allow the gelatine to thicken.
- Whisk in whipped topping. Fold in 1 ½ cups diced strawberries.
- Spoon filling into graham cracker crust. Sprinkle with remaining diced strawberries.
- Refrigerate for 3 hours, or until set.
- Garnish, slice, and serve!
