Chicken Tagine Makful

Packed with spices and zesty lemon, this yummy chicken recipe to be prepared in a traditional Tagine is sure to please your whole family.

Ingredients

Batch 1

  • 2 kg Whole Chicken
  • 30 g Chopped Garlic
  • 800 g Chopped Onion
  • 20 g Dry Coriander
  • 20 g Fresh Chopped Parsley
  • 30 g Ginger Powder
  • 20 g Salt
  • 20 g White Pepper
  • 40 g Smen (Substitute: ghee)
  • 1 g Saffron
  • 1 pc Yellow Colouring (optional)
  • 1 Litre Chicken Stock

Batch 2

  • 150 g Preserved Lemon Wedges
  • 100 g Green Olives
  • 100 g Fresh Tomato Sliced

Method

Marinate the chicken for 1 hour with olive oil, onion, coriander, parsley, saffron, smen (or ghee), salt, pepper and ginger powder. Start cooking the marinated chicken in a tagine (or glass/ceramic oven dish) for 45 minutes at 180°C (with the yellow colouring) and the chicken stock. After the chicken is done, rectify the seasoning and add Batch 2. Continue cooking for another 10 min. Once done, your Chicken Tagine Makful is ready to be served.

Chicken Reshmi Kebab

Reshmi kebab is made of juicy succulent chicken meat grilled on skewers. You will observe in this yummy chicken recipe that the meat gets a silky texture due the marinade used. Reshmi in Hindi language means silk, an apt name for these kebabs.

Ingredients

  • ½ kg Boneless Chicken
  • 1 cup Hung Curd
  • 1 tsp Garlic Paste
  • 1 tsp Ginger Paste
  • ½ tsp Pepper Powder
  • ½ tsp Garam Masala Powder (optional)
  • ½ cup Cashew Nut & Almond Paste
  • 2 tbsp Fresh Cream
  • ½ Lemon Juice
  • Salt to Taste
  • 4-5 Wooden Skewers
  • 1 Red Bell Pepper (diced in cubes)
  • 1 Green Bell Pepper (diced in cubes)
  • 1 Yellow Bell Pepper (diced in cubes)
  • 1 Onion (diced in cubes)
  • 1 tsp Oil
  • 1 tsp Butter
  • Chaat Masala or Coriander for garnish

Method

Cut ½ kg boneless chicken in small pieces and put them in a bowl. To this add the hung curd, garlic paste, ginger paste, pepper powder, garam masala powder (optional), cashew nut and almond paste, fresh cream, lemon juice, and salt. Mix and marinate them properly. Keep the chicken aside for a minimum of 1 hour in the refrigerator. The longer the chicken stays marinated, the tastier and silkier it will turn out. ½ hour or 15 minutes before you remove the chicken to cook, dice the bell peppers and onion in cube shapes. Slide the chicken on the wooden skewers while adding bell peppers and onion in between them. Ensure you leave a little space between the chicken and vegetables.

Heat the grill pan (you can also barbeque in a tandoor or grill them in an oven). Pour oil on the pan, followed by butter, and spread it out evenly with a brush. Place the skewers on the grill pan. Keep the flame on low and after 5 minutes turn the kebabs. Keep doing so until they are cooked evenly on all sides. After 20-25 minutes, remove them from the grill pan. Sprinkle chaat masala or coriander. The silky, soft and delicious Chicken Reshmi Kebabs are ready to be served.
