Strawberry and Rose Petal Jam

Breakfast with Strawberries and Dough

Ingredients:

  • 750g strawberries, hulled and chopped
  • 350g white sugar
  • Juice of 1 lime
  • 2tbsp dried rose petals
  • 1tsp rose water

Method:

  1. Wash strawberries, remove leaves and core; chop them.
  2. In a saucepan, add sugar, strawberries and lime juice. Cook on medium-low fire until the sugar is dissolved and the mixture starts bubbling for approximately 10 minutes.
  3. Now reduce the flame to low settings and cook further, stirring every few seconds; add rose water and petals. Cook for approximately 20-25 minutes until strawberries are pulpy and reduced to a thick syrupy consistency.
  4. Now pour the hot jam into a sterilised sealed jar and let the jam cool in it.

Oat Bran and Wholemeal Bread

Breakfast with Strawberries and Dough

Ingredients:

  • 1 cup oat bran meal
  • 1 cup wholemeal flour or atta flour
  • 2 cups plain flour
  • 1 1/2tsp dried yeast
  • 1tbsp sunflower oil
  • 3/4tsp salt
  • 1tbsp sugar
  • 2cups warm water

Method:

  1. Pour yeast in warm water, add sugar and stir well to dissolve yeast and sugar. Let it rest for 10-15 minutes.
  2. Sieve flours in a mixing bowl; add oatmeal, oil and salt. With the help of a dough hook, mix all at low speed. Gradually add yeast water while the machine is still on, to let all the dry and wet ingredients combine well and form a dough ball.
  3. Increase the speed to medium-high and mix further for approximately 7-10 minutes until it’s elastic and gluten is formed.
  4. Place dough in an oiled bowl, cover with cling wrap and rest at a warm place for 3-4 hours to rise double in size.
  5. Remove the dough on a floured surface and knead well to make it smooth.
  6. Grease baking loaf tin, sprinkle flour and dust off the extra. Place the dough in the prepared tin, put 3-4 cuts on top, cover with plastic wrap and let it rest for proving for another 2 hours.
  7. Brush lightly with water, sprinkle rolled oats on top and bake in preheated oven at 200 degree Celsius for 20-25 minutes.
